The humble sponge cake – who doesn’t love this eternal classic?
These can be adapted and modified to suit any taste and preferences, for example, you can add jam, cream, nutella and more!
People love this instant hit, and it will always go down a treat in any household.
It is simple to make and the recipe can be followed by anyone, which makes it a great cake baking exercise to do with your kids and the whole family!
Lets get stuck into the recipe.
Ingredients:
- 200g softened butter
- 200g golden caster sugar
- 4 large eggs
- 1/2 lemon zest
- 1 tsp vanilla extract
- 200g self raising flour
- splash of milk
- optional fillings
- icing sugar for dusting
Method
- First heat the oven to 180C or gas mark 4, butter and line the base of two cake tins with baking paper
- Use an electric whisk to beat the butter and sugar together until fluffy. Crack in the eggs one at a time and whisk well. Then add lemon, vanilla, flour and milk, and whisk and divide between two tins.
- Bake for 25-30 mins until a clean skewer comes out when inserted into the middle. Leave them for ten mins then pop out of tins and fill them as you like before sandwiching together.
